Easy Chicken, Potatoes, & Green Bean Bake!

Pinterest has dozens of people trying the Chicken Potatoes and Green Beans Recipe so I thought I’d give it a try. Here’s what I did:

I thawed out 5 Chicken Breast Halves (1/2 a Breast is one serving) and put them in an olive oiled baking dish. Added 3 medium russet potatoes cubed to one side and a package of frozen green beans on the other.

I drizzled EVOO over everything. I recommended brushing the entire pan with EVOO before hand, but you will need more oil on top.

Then, I seasoned the entire dish (minus one chicken breast for the kids) with Mrs Dash Original and a bit of Lawry’s Seasoned Salt. It was baked at 350 degrees Fahrenheit for approximately 40 minutes. You have to check it at 30 minutes and the breasts should be 165 degrees for safety.

This is how it turned out! It really is as easy as the Pinners said it would be and it’s great! It’s a very satisfying meal that fills you up but not your arteries.

As far as clean eating goes…I obviously omitted some big things from the original recipe. I used Extra Virgin Olive Oil instead of Butter and I used herbs instead of Italian Dressing. Some may argue that Frozen Green Beans are not considered to be “clean” but in this house they are. Frozen fruits and veggies are flash frozen, preserving all of their nutrients. If you gets organic frozen…even better. Also I’m pretty sure Lawry’s Seasoned Salt isn’t considered clean, but we love it. It’s a special treat. Overall, this meal is fairly clean.

Chicken , Potatoes & Green Bean Bake

3 Chicken Breasts – Halved
1 Package of Frozen Green Beans
3 Medium Potatoes – Cubed
Extra Virgin Olive Oil (EVOO)
Mrs. Dash Original Blend (optional)
Lawry’s Seasoned Salt (optional)

1. Brush the bottom and sides of a 9x13in Baking Dish with EVOO.

2. Place the chicken down the center of the pan, the frozen green beans on one side and the potatoes on the other.

3. Drizzle potatoes, chicken and beans with EVOO.

4. Season with whatever dry spices you like. I used Mrs a Dash (salt free) and Lawry’s.

5. Bake at 350 degrees F for 30-40 minutes or until center of chicken reads 165 degrees F on an instant read thermometer.

On a side note: my extremely picky 4yo, who nearly tosses his cookies at the table every meal, ate two big bites of chicken, two green beans and a bite of potato without any prompting. So, apparently its not too bad ;P
