The Work Crew

This is just a peek into my home. My kids beg me to help out with the store. The 7yo, help put item in cellophane bags and the 4yo puts logo stickers on the items. I love that they want to help O’Frizz:30 grow. They even give me great suggestions. The eldest recently requested Spider-Man stuff. That might be beyond my design skills, but I love the enthusiasm!

So, if you ever get a bag whose seal is crooked or whose sticker is upside down, just remember that its because of family love!

Easy Chicken, Potatoes, & Green Bean Bake!

Pinterest has dozens of people trying the Chicken Potatoes and Green Beans Recipe so I thought I’d give it a try. Here’s what I did:

I thawed out 5 Chicken Breast Halves (1/2 a Breast is one serving) and put them in an olive oiled baking dish. Added 3 medium russet potatoes cubed to one side and a package of frozen green beans on the other.

I drizzled EVOO over everything. I recommended brushing the entire pan with EVOO before hand, but you will need more oil on top.

Then, I seasoned the entire dish (minus one chicken breast for the kids) with Mrs Dash Original and a bit of Lawry’s Seasoned Salt. It was baked at 350 degrees Fahrenheit for approximately 40 minutes. You have to check it at 30 minutes and the breasts should be 165 degrees for safety.

This is how it turned out! It really is as easy as the Pinners said it would be and it’s great! It’s a very satisfying meal that fills you up but not your arteries.

As far as clean eating goes…I obviously omitted some big things from the original recipe. I used Extra Virgin Olive Oil instead of Butter and I used herbs instead of Italian Dressing. Some may argue that Frozen Green Beans are not considered to be “clean” but in this house they are. Frozen fruits and veggies are flash frozen, preserving all of their nutrients. If you gets organic frozen…even better. Also I’m pretty sure Lawry’s Seasoned Salt isn’t considered clean, but we love it. It’s a special treat. Overall, this meal is fairly clean.

Try out yourselves! You can find lots of recipes on Pinterest or you can try this one.

Chicken , Potatoes & Green Bean Bake

3 Chicken Breasts – Halved
1 Package of Frozen Green Beans
3 Medium Potatoes – Cubed
Extra Virgin Olive Oil (EVOO)
Mrs. Dash Original Blend (optional)
Lawry’s Seasoned Salt (optional)

1. Brush the bottom and sides of a 9x13in Baking Dish with EVOO.

2. Place the chicken down the center of the pan, the frozen green beans on one side and the potatoes on the other.

3. Drizzle potatoes, chicken and beans with EVOO.

4. Season with whatever dry spices you like. I used Mrs a Dash (salt free) and Lawry’s.

5. Bake at 350 degrees F for 30-40 minutes or until center of chicken reads 165 degrees F on an instant read thermometer.

On a side note: my extremely picky 4yo, who nearly tosses his cookies at the table every meal, ate two big bites of chicken, two green beans and a bite of potato without any prompting. So, apparently its not too bad ;P

Wonder Woman Has Landed

It took her a while to find her invisible airplane, but Wonder Woman has made it to ZeroFrizzThirty on Etsy!  Just consider her fashionably late…because she’s Wonder Woman and you don’t criticize an Amazonian with a lasso. ;P

Feeling Better in 2015!

So far this year is off to a pretty good start. I’m feeling much better as I figure out what food works best to fuel this meat suit I drive around everyday! I started a Daniel fast on the 6th and I’ve noticed that removing sweeteners has been the biggest help. Since then, I’ve broken the Daniel fast a couple of times but I had 8 days straight of complete success. I’m going to keep up a highly vegetable and fruit based diet and keep treats as just that…treats!

2014 was a pretty tough year looking back on it. I didn’t really feel stressed but there’s was quite a bit of stressful things going on. I was hospitalized in March 2014 with a Carotid Artery Dissection and I have been struggling with high blood pressure and borderline high cholesterol levels since the event occurred. The driving force behind my new health walk is the awareness that I’m childish and I need to grow up! I’m 5’3″ tall and weigh 129 pounds (9 pounds down from 3 months ago). So, yes, you can be a skinny fat person. My lab results, blood pressure spikes, and heart palpitations remind me daily of that fact. So, I’m growing up. I’m going to make sure I’m around to raise my two beautiful boys!

Bean and Corn Salsa

I have been on a Daniel Fast for the last 7 days and have been scouring Pinterest for Vegan type recipes. I came across a recipe for Black Bean and Corn Salsa that looked great but I didn’t have all the ingredients.

Here’s my own delectable adaptation…

1 15oz can of Pinto Beans
1/2 15oz can of Sweet Corn
2 Medium Avocados
1 Roma tomato – diced
3 Sweet Peppers – diced
1 Lime
Salt to Taste

I ate mine with Simple Truth Organic White Corn Chips…yum!

We didn’t have onions, jalapeños, or cilantro on hand, but this still tasted very good.

Here’s what works about the recipe…
1. Avocados …I hate them but they are a must for this recipe! It’s like having Sour Cream on your chip with out the lactose and gas!

2. The Sweet Peppers… I credit this woman’s recipe that I adapted with putting this on the ingredient list. These add the pepper taste without any heat. It’s like candy in your salsa!

3. Fresh Lime Juice… For me this gave it an authentic Mexican flavor with out the onions (which I can’t eat), garlic and cilantro.

I’ve had a huge craving for sweets and this knocked it out of me without a single fruit or grain of sugar in it. Also, I’m going to make this again with Black Beans next time, which will make it prettier, and I’ll add another avocado (says the avocado hater…I only added one tonight. Not nearly enough.)

Hope you all are having a great week so far!
